MY APPROACH

Start with the people doing the work.

I pay attention to where a station slows down, where instructions live only in someone’s head, and where a tool asks staff to work around it. Then I make the work clearer and easier to repeat.

Built on service experience

My work spans dining room and bar service, bar leadership, cocktail development, training, and day-to-day restaurant operations. I know the difference between a system that looks tidy on paper and one that survives a Friday night.
